Move aside frozen desserts, Posh Puds has a fresh twist on the humble crumble

Move over frozen desserts, winter is bringing out the humble crumble – with an elegant twist.

Posh Porridge owner Olivia Burtt has flipped the hot rolled oats breakfast on its head, switching the oats on the bottom and fruit on the top, and turning it into a favourite Kiwi pudding business.

Burtt said she’s been playing with Posh Puds for 18 months, using many of the ingredients in her porridges to create next-level fruit crumbles because “after midday, people don’t tend to want to eat porridge”.

Fruit crumble was more “afternoon/evening friendly,” she said.

Posh Puds takes inspiration from a trendy UK pudding store, Humble Crumble, which has opened five stores throughout London and its outskirts over the last eight years.

“This is our little play on the idea and dipping our toe in the water.”

The classic apple has been a popular flavour at events and markets, but Burtt has been enjoying getting creative with seasonal fruits including feijoa and apricot; plum, apple and blackcurrant; and rhubarb and raspberry.

She thought customers would be a bit more “bold,” opting for fresh flavours, but said “the classics are classic for a reason”.

“Even though apple crumble can be made at home, people go for it because it’s so delicious … and nostalgic going into winter.”

The posh part comes from the flavours and toppings, which include custard, almonds, whipped cream and caramel.

Burtt’s not stopping at fruit crumbles, she’s also been developing rice pudding and classic chocolate salted pudding for future menus.

At university she was interested in food science and commerce, leading her to work at Nestle and Cookie Time before a stint in the UK.

Returning to Christchurch in 2018 she later bought Posh Porridge, which was started 15 years ago and has had two different “careful lady owners” before Burtt took it on about three years ago.

She has also bought the granola-making company Mumma Bear.

“I’ve always really enjoyed working in food [and] I really like the idea of building a great little collection of brands and products that people really enjoy.”
